Following years of dreaming of an authentic Mexican restaurant in Gainesville, Abigail and Pepe Perez are opening Consuelo on the downtown Gainesville square. Set to open in late summer, Consuelo will offer a carefully curated authentic menu, craft cocktails with specialty tequilas and an atmosphere that downtown Gainesville is hungry for.
The restaurant, will be located at 112 Bradford St., and is named in memory of Pepe’s grandmother and her legacy of creating a sense of family, comfort and fun surrounding mealtimes. Pepe is originally from Guadalajara, Mexico, and Abigail is a first-generation Mexican American; the couple can’t wait to share their new concept with Northeast Georgia.
“We are excited to contribute to the energy, vitality and growth of the Gainesville square,” Abigail said. “We can’t wait to share our version of authentic Mexican food, cocktails and unique dining experience with Gainesville and North Georgia!”
Pepe and Abigail have lived in Gainesville for 10 years and are the owners of local companies Pristine Clean; and Pristine Painting.
