Meet Austin Calvert! Austin is the executive chef at Recess Southern Gastro Pub, just off the downtown Gainesville square. Austin is married and the couple has one daughter. He said his favorite dish to prepare at home is a Reverse Seared Bone-in Ribeye and roasted artichoke!

We want to thank Austin for spending time with us recently and telling us more about himself and his love for Hall County.
Question: Please tell us a little bit about your family.
Answer: “I have an adorable 3 year daughter who loves to laugh, learn, and play. And am happily married to a beautiful wife who cares for her family and friends with everything she has.”
Q: What is your favorite dish to make at home?
A: “Reverse seared bone in ribeye and roasted artichoke. Heat oven to 275. Season steak with your favorite spices. Put steak on cooling rack above sheet pan and cook for 45 minutes to 1 hour. While steak is in the oven preheat grill. When internal temperature of the steak has reached 115-125 degrees (for medium rare when finished) remove and let rest covered. Season steak with more salt(helps give steak restaurant quality crust). Sear steaks for a few minutes on each side. Enjoy.”
Q: What lead you to your current career?
A: “I was working in a restaurant while going to school for business administration when I woke one day and realized that food was what I really wanted to do.”
Q: What are two of your favorite restaurants in our community?
A: “Inked Pig BBQ and Taqueria Durango.”
Q: If you could travel anywhere in the world right now, where would it be and why?
A: “Assuming times were normal I’d love to go to Japan mostly to experience the eclectic cuisine.”
Q: What is one of your favorite movies? TV shows?
A: “‘Lord of the Rings’ Trilogy and ‘The Walking Dead.'”
Q: If you were asked to give advice to a group of people, what would you say?
A: “To make the hard choices in life and to follow what your head AND your heart together tell you what to do.”
Q: If you were able to be cast as yourself into a television show or series, what show would you want to be in?
A: “I enjoy watching television but have never really been one to want to be on television..”
Q: If you could choose anyone to have lunch with, who would you choose? Why? And where, locally, would you meet for this lunch?
A: “My friend Jeffrey Gay who passed away in 2012. So we could catch on all the things that have happened over the years. Also so I could introduce him to my wife and daughter. Both of who I know he would love and adore. Lunch would have to be at Mellow Mushroom.”
Q: What is your favorite thing about our community?
A: “Definitely Gainesville’s sense of camaraderie. Whether you grew up here, moved here, or are just visiting somebody will be waiting to greet you with open arms.”
Q: Where do you see yourself in five to 10 years?
A: “Owning/operating my own restaurant with my family by my side.”
Q: What is your go to band / singer when you cant decide what to listen to?
A: “Sturgill Simpson or Ryan Bingham”
Q: Favorite month? favorite holiday? and best single day on the calendar?
A: “February, Christmas, July 21.”
Q: What would you rate a 10 out of 10?
A: “A Recess cheeseburger.”
Q: What is something you want to do when the pandemic is over?
A: “Take the family to a Braves game then on a much needed vacation.”
Q: Who inspires you to be better?
A: “My daughter.”
